There is over 370,000 people that is doing Veganuary this month and I have a fast and easy meal prep that can make this experience simple and easy! 🙂 This is a great vegan alternative if you’re a new vegan and you are trying to find replacement foods for eggs and bacon.

Ingredients:
4 Tbsp Vegan Egg (Follow Your Heart)
7 Slices Smart Bacon (Lightlife)
1 Whole Wheat Bun (Whole Foods)
1 Cup Water Spray Can Coconut Oil Pinch Onions and Mushrooms (Chopped)
Nutritional Yeast Season Salt Directions: Turn stove top to medium heat w/ skillet. Spray pan with light coat of oil. Follow the directions for the follow your heart vegan eggs, mix, and add to cooking pan. While that is cooking, warm up smart bacon and toast whole wheat buns in the airfryer. When the vegan egg is finished. Add onions and mushrooms to do a quick stir fry and scramble it with the vegan egg. Add seasonings, and build your plate or sandwich! That’s it!
