I love tacos, and I use to enjoy going to Taco Bell to get something fast and convenient, but the food is not organic, and it’s high in sodium.

It is a great alternative option that you can do at home, and it’s fast to make and fun if you have kids.

Macronutrients (serving size four tacos w/ leftovers)

  • Protein 80g
  • Carbs 100g
  • Fat 49g

Macronutrients (serving size two tacos)

  • Protein 41
  • Carbs 53g
  • Fat 26g

Ingredients

  • 100g Shredded Romaine Lettuce
  • 336g Smart Ground Crumbles @lightlifefoods
  • 100g Chopped Tomatoes
  • 2 Tbsp Vegan Sour Cream @tofuttibrands
  • 102g Chopped Avocado
  • 100g White Onions
  • 80g Bell Peppers
  • 100g Shiitake Mushrooms
  • 28g Shredded Vegan Cheddar Cheese @daiyafoods
  • 1 Lime
  • 2 Chopped Garlic Cloves
  • 2 Taco Shells @gardenofeatinchips
  • Cayenne Pepper
  • Olive Oil Spray

Directions

Spray olive oil spray in an iron pan to sauté chopped onions, bell peppers, and mushrooms on medium heat.

Spray olive oil spray in a nonstick pan and cook the smart crumbles with cayenne pepper on medium heat.

Place taco shells in an air fryer for about 2 – 5 mins.

Place all cook items to the side and build your tacos!
