High Protein Low Carb Vegan Thai Chicken!

Here’s a great alternative that you can make fast at your home!
Ingredients:
- 1 cup TVP (Textured Vegetable Protein)
- 1/2 cup Mushrooms
- 1 cup Carrots
- 1/2 cup Frozen Corn
- 1 cup Unsweetened Coconut Milk
- 1/2 cup Tomatoes
- 1/2 cup Onions
- 5 Garlic Cloves
- 1 tbsp Parsley
- 1 tbsp Curry Powder
- 1 tbsp Black Pepper
- Olive Oil Spray
- Dash Cayenne
- Dash Sea Salt
- Purified Water
Macronutrients: (Serving 1)
- Protein 27g
- Carbs 32g
- Fat 4g
Equipment:
Iron skillet @lecreuset
Directions:
Spray olive oil in an iron skillet, set it on medium heat and stir fry all of your vegetables.
Place TVP in a bowl filled with purified water and let it soak for 2 mins.
Strain TVP and add it to the stir fry. Add coconut milk and add all of your seasonings.
Let it cook for a couple of mins and prepare your meal.
Add brown rice this is optional if you want to boost up your carbs! Use cauliflower rice if you’re trying to keep the carbs low.
